Can I say: “The first period is math”? If I am a teacher and I want to talk about my periods in school, can I say that? And the subjects of school must be capitalized?

James’ answer is correct in general. If you are referring to a course by its title, though, that would be capitalized. This might be more common at the university level where there are more courses.

American: "math". British: "maths" <--- from mathematics "first class" means something to do with quality, so "First period is ..." or "The first period is ..." "The first class, today, is ...." "First class, today, is ..." but "First class is " - sounds a little strange. Not impossible with context, but a little strange to my ear. . Try the salad. It's first class.

You can say that. Math (or maths in British English) is not capitalised. Only languages such as French or English are capitalised because they are proper nouns. You can say "The first period..." or "The first class ...."
