こんにちは！Atsushiです。
今日の北海道の天気は晴れ。
気温は24℃、少し暑いです。

今日、日本語レッスンでの会話で、海外にある日本食の話をしました。その後、ふと、寿司のはじまりについて興味がわきました。

日本といえば寿司！という方も多いかもしれませんね。
私も寿司は大好きです！特にあじが好きです。

ということで、今日は寿司のはじまりについて話します。


寿司のはじまりは、なんと日本ではなく、東南アジアです。
当時、山に住んでいた民族は、魚を取るのが大変でした。
その為、長い間保存できるように考えられたのが、
なれずし(熟鮓)
というものです。今の寿司よりも、もっと米がドロドロになるまで発酵(はっこう)させていたようです。これが寿司のルーツです。

日本では、1300年ほど前の700年代ごろ、奈良時代(ならじだい)、寿司のようなものが入ってきます。そして、押し寿司(おしずし)などが広がっていきました。

江戸時代(えどじだい)500年前から150年ぐらい前までの間に、発酵させない寿司が出てきました。江戸時代の終わりには握り寿司(にぎりずし)が出てきますが、その時はまだ、おにぎりのような大きさでした。

氷を作れるようになった明治時代(めいじじだい)には、魚を生のままで、いろんな場所で食べられるようになりました。そして今のような握り寿司の形になっていきます。


全国に広まった理由は災害(さいがい)でした。
約100年ほど前の1923年、関東大震災(かんとうだいしんさい)がありました。

この時に寿司職人(すししょくにん)たちは、いろんな地域に移り住み、地方でも寿司屋をしたため、全国に広まった、といわれています。

いつも、なにかのルーツをしらべる時におどろにますが、文化や習慣、言葉が広がっていく時は、何か悪いことが起きた時が多いです。人は大変な時こそ、強い力を発揮するんですね。
