El piloncillo además de ser un básico en la cocina mexicana, aporta múltiples beneficios a la salud de quien lo consume.

Se trata de un dulce ampliamente utilizado en la gastronomía de varios países latinoamericanos, así como en la India, Laos y Pakistán. Su llegada a México se remonta a la época de la Conquista y la Colonia. El piloncillo tiene como base de su preparación el jarabe o jugo no destilado de la caña de azúcar.

El piloncillo o “chancaca” palabra derivada de chiancaca, de origen náhuatl , significa «azúcar morena». Con la introducción del cultivo de la caña de azúcar durante la época de la Colonia, llegaron también técnicas y elementos necesarios para su producción. Se les conocía como trapiches o molinos a los artefactos con los que se elaboraba este producto.

Este endulzante 100% natural se obtiene al hervir el jugo de la caña de azúcar. La melaza resultante se solidifica en moldes o se envuelve en hojas de palma, esta última es su presentación más tradicional. Para obtener solamente una tonelada de piloncillo se necesitan aproximadamente diez toneladas de caña de azúcar.

En México el principal productor de piloncillo es el estado de San Luis Potosí, que cada año contribuye con aproximadamente 60% de la producción nacional. 


El proceso de elaboración del piloncillo suele variar según la región y las costumbres. Sin embargo, la forma de preparación tradicional generalmente es la siguiente:


Exprimir la caña de azúcar en trapiches para obtener el jugo.
El bagazo sobrante se deja secar y se utiliza para encender el horno.
El jugo de la caña se calienta en el horno hasta alcanzar su punto de ebullición.
Después es colocado en una revolvedora, que al no parar de girar, hace que el jugo de caña se vuelva espeso.
Posteriormente se vacía en moldes de madera con forma de cono.
