Are the sentences both correct?
"It's a pity that she died so young."
"It's a pity that she died at such a young age."

Yes. We sometimes omit "it's a" and just say
"Pity, that she died so young."
which is not really a complete sentence, but we say it that way anyway. Although the words "it's a" are missing, our brains hear them anyhow.
