What does mean “large” in this sentence? “What if I offered you $100,000 large.” Is it “in cash”?

Large here means currency of high value

Also the word large here is used instead of the word thousand. A 100 Large is what is typically written in place of $100,000.

In US slang, "large" can refer specifically to $1,000. "A hundred large" would mean $100,000. (So would "a hundred grand.") As written, the sentence is puzzling. I would like to know the exact source. You would not say the word "dollar" if you were using the slang term "large," so when it is transcribed into written English, the dollar sign ($) should not be used. If the word is still used today, and if criminals deal in amounts that large, then it is possible that someone could say "one hundred thousand large" and mean $100 million--but it seems unlikely.
