Is 'I can take one of the lake' a specific expression in British English? If it was changed to American English, how would it be expressed?

It's no different in American English. The most common way to tell your listener the subject of a photo (or more often "picture" in American English) is "a photo (or picture) of [subject.]" She's just using the pronoun "one" instead of repeating "photo."
