많은 한국 음식이 맵다는 사실은 매일 새로운 것을 시도하는 것을 막지 못한다. does this sound natural?
The fact that a lot of Korean dishes are pretty spicy doesn`t prevent me from trying new ones every day.

I don't think It sound natural. You can say "한국 음식에 매운 게 많긴 하지만, 그렇다고 내가 매일 새로운 음식 먹어보는 걸 막진 못해." :-)
