"...do you like best?" No "the" here. :) "The" only applies to nouns, but "best" describes a verb.
The question is basically about singular and plural. "Kind" asks for a single answer, and "kinds" asks for several.
Here, using "animal" (singular) is speaking in general. "Animals" refers to a certain list of examples.
