what does 'to have the upper hand' mean? For example I think that's kind of a tip for navigating all kinds of relationships, personal and professional, on stage or off. If you can acknowledge that your conversational partner is right, suddenly you have the upper hand. Does it mean you have an advantage on something?

It means to have an advantage over the other person. And because of that advantage, to be in a position of some power.
