Evaluate and assess are similar. Appraise is usually used passively, and it usually refers to an item of value like a house, a property or perhaps jewellry.
You can look at common collocations to get a sense of each one is USED, though.
You can evaluate or assess an outcome of a project.
A candidate's suitability can be evaluated or assessed in an interview.
Bosses do assessments and evaluations of their subordinates.

Appraise = to evaluate the quality and say what the value is
My house has been appraised at $350,000.
This diamond ring was appraised at $3200.
