Is it correct to say 感謝いたしておりました？
I know that phrases like 感謝します, 感謝いたします and 感謝いたしております exist
but I'm not sure about 感謝いたしておりました and 感謝いたしました.

They are grammatically correct. They barely sound natural.
The thing is.. I think they're so polite expressions that most Japanese don't use them normally except for some persons of noble birth.
