It is a part of an English class. Students are required to listen to a song and then fill in the blanks in the lyrics. Take sailing for instance. I ( ) sailing, I am sailing, home again, cross the ( ). Thank you for your help.

I agree with Harry. In general, this exercise is called "fill-in-the-blanks". If you wanted to describe the entire activity, you could say, "Listen to the song then complete the lyrics by filling in the blanks".

I don't think we have a specific word for this (as far as I know). It's quite okay to call it 'filling in the blanks' or a 'fill-in-the-blanks exercise'.
