"Ich kann es nicht glauben" oder " Ich kann das nicht glauben"

Both are right. "Das" adds a bit more emphasis, and is more likely to be used for something concrete. You can also use "Ich glaube es (einfach) nicht!" or "Ich glaub's (einfach) nicht!" as an exclamation.

Are you looking for a literal translation? "ich kann nicht glaube es."
or you could just say "Ich glaube nicht".
