En este caso tienes que usar "quisiera".
Quisiera mejorar mi español. Es correcto
Querría mi español. No es correcto.

The best way to say that is: "me gustaría mejorar mi español" or "quisiera mejorar mi español" (both are like a fuish), "querría mejorar mi español" isn't wrong but... the first ones are better, and I think only the first one is the best :)
