Do I use a pronoun here?
If I wanted to say "I bought kimbap" do I say 저는 김밥 샀어요 or 김밥 샀어요? Or do both work?

You could do either one:
저는 김밥을 샀어요
김밥을 샀어요
If it's clear who the subject is, then you can leave it out. =)
