The short answer is, yes. "I have sight in only one eye" is common. "He suffers from blurred sight" is ok, but not so common. I think we usually call the condition blurred vision. It's the usual collocation. But ask others what they think.

I agree with Moira. "I only have sight in one eye" sounds better though. I would never say "blurred sight", I would always say "blurred vision".
