There are two sentences I don't understand. -In one instance, she and her colleagues observed two day octopuses mating on a reef. Wouldn't it be 'two days'? -In another instance, researchers watched a large female day octopus off the coast of Micronesia. 'A large female day octopus off' What does it mean? Thank you :).

No, because it's referring to a species of octopus called a "day octopus". English adjectives don't change form to match the number of nouns they describe. "Off the coast of Micronesia" means the octopus was in the water relatively near the shore.
