How can I say this? Is it correct to say "He mimicked/imitated his boss/his boss's voice."? (If someone copied the way someone else speaks, especially if they don't like them or get annoyed with them or want to make other people laugh)

In this case "mimicked" sounds better since he is making fun of his boss. MIMIC: 1. to imitate or copy in action, speech, etc., often playfully or derisively. 2. to imitate in a servile or unthinking way; ape.

You could also say "impersonated", although this usually means to copy a person's mannerisms as well as the voice.
