예쁘다 is the correct spelling. 이쁘다 is a non-standard variation of 예쁘다.
In conversation, a lot of people pronounce it as 이쁘다, but rarely use it in writing.
There are a lot of such deviant pronunciations in Korean.
For example, 네 (너의, your) is more often pronounced 니 in conversation but not in writing.
