"The man sitting" or "the man sitted"
Hello!
I would like to know if it is wrong to say, for example
1. I didn't talk much to THE MAN SITTED next to me
and, in case it is not wrong, if there's any substantial difference from
2. I didn't talk much to THE MAN SITTING next to me.

There isn't such a word as "sitted". Only the second sentence is correct. You can also say "I didn't talk much to the man who was sitting next to me."

Agree with Tobi.

The correct word to use in the first sentence would be "seated" instead of "sitted". That way the sentence is grammatically correct.
