Is the word "freezing" using correctly in the following sentences?
1. Hope you are enjoying the freezing in (somewhere)?
2. My hometown in Mexico is freezing in winter.

The first one is incorrect.
The second one is correct.
What do you mean by "freezing in"? Are you trying to say "snowed in"?

So, the second sentence is grammatically sound, since you are using "freezing" to describe the cold in your hometown.
In your first sentence, Hope you are enjoying the _______________. We would expect a noun in the blank.
For example: Hope you are enjoying the party (noun). When you use a verb or adjective, the sentence structure is not right.
