Normalmente podemos intercambiar ambas formas, sin embargo, hay casos en los que no suena tan bien poner la forma en -se. Por ejemplo, se puede decir "¡qué más quisiera yo!", pero no "qué más quisiese yo!". Igualmente se puede decir ""yo no quisiera llegar tarde", pero suena raro "yo no quisiese llegar tarde".

No hay diferencia, son iguales. Es que el pretérito imperfecto de subjuntivo tiene dos formas. Por ejemplo, mira el verbo comprar: yo comprara o comprase tú / vos compraras o comprases usted comprara o comprase él, ella comprara o comprase nosotros, nosotras compráramos o comprásemos vosotros, vosotras comprarais o compraseis ustedes compraran o comprasen ellos, ellas compraran o comprasen

Hi Joe! Like the natives already told you, there are two subjunctive forms. The "fuera" kind seems to be the most common in speech and the "fuese" you'll find more in books, but there's no real rule to this. I once used the first kind in a text and about 3 natives changed it into the second kind, because apparently it sounded better that way to them.
