I think you meant to write 'Not only did I learn Chinese, but also I learned English/but I also learn English', rather than 'did he learn'.
You need to write the sentence like this for it to be grammatically correct: 'Not only did I learn Chinese, but I also learnt English' OR you could write it like this: 'Not only did I learn Chinese - I also learned English'.
