They just need to be nouns: "I wish you happiness and health". If it's for the end of a message/letter, you could use: "Wishing you happiness and health". An alternative would be to include a noun after the adjectives "happy" and "healthy": "I wish you a happy and healthy New Year". Hope this helps!

Not really - we would say "I wish you health and happiness", using the nouns rather than their adjectives.

"you happy and healthy" is your problem.
Hope and wish as tricky too.
I wish you a happy and healthy new year. (a thing, future)
I hope you have a happy and healthy new year. (that you do something, future)
I hope you are ... is present tense, so for example; I hope you are not tired (now)
I wish for you all happiness and health ( a thing, future)
