is it possible to use both subject particles on a word?
i feel like i’ve heard it before:
ex) “해찬이가...”
is this used to emphasize who/what the subject is or does this not exist?

It is not possible to use both subject particles on a word.
There is only one subject particle in 해찬이가.
해찬이가 << 해찬이(name) + 가(subject particle)
해찬이 << 해찬 + 이
해찬 is a name of a person
이 is a suffix used after a name which ends with consonant. it add nuance of intimacy.
이: 자음으로 끝나는 사람 이름 뒤에 붙어, 그 사람을 자신과 동년배나 아랫사람으로 대하는 뜻을 더하는 말. 흔히 친근한 사이에 쓴다.

The 이 isn't a subject marker here. It's just common to add it to names ending in consonant when speaking about someone in 반말. Could just as well be 해찬이는.
