'I like vegetables.' is the correct way because you are talking about more than one vegetable.

Hi Hafsa. The correct way is to say "I like vegetables." It is not common to say "I like vegetable."
You can use vegetable in singular form, for example : Cabbage is a leafy green vegetable. Kale is my favorite vegetable.
