'I like vegetables.' is the correct way because you are talking about more than one vegetable. There are some exceptions to the -s plural suffix — such as 'There are 10 sheep.' or 'I think aircraft are cool.' — though most of the time plural nouns use the -s suffix.

Because it is a countable noun, you'd need to use the plural form 'vegetables' when making a general statement.

Hi Hafsa. The correct way is to say "I like vegetables." It is not common to say "I like vegetable." You can use vegetable in singular form, for example : Cabbage is a leafy green vegetable. Kale is my favorite vegetable.
