LA COCHINITA PIBIL.

En la época prehispánica, la cochinita pibil era un platillo que se degustaba cada 2 de noviembre durante el llamado “Hanal Pixan” -comida de las almas-. Este guiso se elaboraba con faisán, jabalí o venado y se cocía en el pib u “horno de tierra”.

Después, durante la Colonia, la carne de esos animales fue reemplazada por la de cerdo. Pero no solo la carne fue lo que cambió, también los hornos de tierra pues fueron sustituidos poco a poco por ollas de vapor u hornos normales.

Ingredientes (para 10 o 12 personas)
2 hojas de plátano pasadas por la flama (para ablandarlas)
1½ kilo de pierna de puerco
½ kilo de lomo de puerco con costilla
200 gramos de recado de achiote (se puede usar el que se vende comercialmente)
1 taza de jugo de naranja agria o mitad de vinagre y mitad de jugo de naranja dulce
¼ de cucharadita de comino en polvo
1 cucharadita de orégano seco
½ cucharadita de pimienta negra en polvo
½ cucharadita de canela en polvo
5 pimientas gordas toscamente molida
3 dientes de ajo exprimido
½ cucharadita de chile piquín
Sal al gusto
125 gramos de manteca de cerdo
1 cucharadita de pimienta blanca en polvo

Salsa para acompañarla:
8 rabanitos muy bien lavados y finamente picados
1 cebolla morada chica picada muy finamente
4 chiles habaneros picados muy finamente
½ taza de cilantro picado muy finamente
1 taza de jugo de naranja agria o de vinagre
Sal al gusto
Preparación
Primero, forra una charola de horno con las hojas de plátano, y deja que éstas sobresalgan para poder envolver la cochinita.
Después coloca la carne sobre las mismas y disuelve el achiote en la naranja agria.
Posteriormente, añade las especias y con esto baña la carne. Deja marinar cuando menos ocho horas o de un día para otro en el refrigerador.
Baña entonces con la manteca derretida, luego envuelve muy bien en las hojas de plátano, tapa con papel de aluminio y hornea en un horno precalentado a 175º C durante 1½ horas, o hasta que la carne esté tan suave que casi se ...
