Is it just means everything?

Settle for something means accepting something although it is not what you wanted.
A bit means not much/
And everything can be money, effection and... Depends on the context.
So
She happily accepts small amount of everything though it is not ideal. She does not want much out of life /relationship /job etc...
Pay attention to the context. Helps a lot!
