I'm (re-) watching Sherlock and got interested with this phrase:
- Yesterday, only one of those pots were shining.
Why does Sherlock use the word were here?

Because Sherlock's grammar is bad. He should say "was".
In your question, you need to put the word "were" in quotes. I had to read your question three times before I figured out what you were asking. It didn't make sense because the quotes were missing.
