I truly appreciate that you all kindly spared time for the interview today. ↑sounds natural?

I truly appreciate your taking time for this interview. I truly appreciate how you have made (or "found" or "given me" or "allowed me") your time for this interview.

Two things seem just a bit off. "Spared" isn't quite the right verb. Instead, perhaps "made". Second thing: if the speaker is referring to his or her own interview, I think it would be more natural to say "for my interview...". "My" instead of "the". There's no particular reason except it just sounds more idiomatic. It remains "the" if the speaker is not referring to his own interview, but perhaps thanking his colleagues for making time to interview a new candidate.
