Is there a difference between a and any before a noun? For example a girl/ any girl would be lucky to have you.

It rather depends on the context. In this case 'any' might be used for emphasis, suggesting that most or all girls would be fortunate.

Depends on the context, really. I would go for "any" in this case.
However, in other instances the difference might not be this insignificant; it could even change the entire meaning of the sentence.
