Is there a saying that can be used as the opposite to "burning bridges"?
Can I say "building bridges" or is that rather meant to establish a relationship between two cultures and not people? E.g. "I rather build bridges than burn them." Does that sound correct to you?

"I'd rather build bridges than burn them." sounds good - notice the contraction of 'would ' added there.
other related collocations are:
to mend bridges (if relations are damaged)
Form ties / bonds - new relations
to reach out to (people/companies)

Yes... (This works for a relationship between two cultures or people)
