Are these senrences OK? And can I use them interchangeably?
It's very disturbing having everyone's eyes on me.
It's very annoying having everyone's eyes on me.
It's very uncomfortable having everyone's eyes on me.

They feel slightly different. Disturbing is the strongest. Annoying can be mild or strong, depending on the speaker. And uncomfortable is quite strong.

Disturbing - similar to 'it makes you feel a little worried'.
Uncomfortable - similar to 'it makes you feel a little embarrassed'.
Annoying - 'it makes you feel a little angry'.

The sentence structure is OK. However, the adjectives you have chosen have different meanings and are not, therefore, not interchangeable.
