What does "a power palate" in this context mean?
It comes from Philippines's drama, a chef says to his staff that " Today is a Kapampangan dishes. That's a power palate, guys. No room for mistakes."

Palate is something related to taste (physical taste). Vocabularies offer two definitions: either a part of the mouth (roof of the mouth) or a person’s ability to feel how different tastes feel differently (if put simply)
In this context, when related to certain dishes or certain cuisine, “powerful palate” most probably means that those dishes or the dishes of that cuisine have rich taste and use many different flavours
