Why is "if" omitted in the sentence?
Much hotter than that, and the material would turn grey.

This seems to just be an informal way of speaking. I can understand it, but I would not use it in formal writing. It really should be something like:
If it were much hotter than that, then the material would turn grey.

It is colloquial so the "if" is implied. Hope this helps :)
