What's the difference between "truth" and "true"?

'Truth' is a noun and 'true' is an adjective.

"It's true, I like bread."
"It's the truth, I like bread."
"I prefer the truth. That is true, yes." But you can't say you prefer the true. Since then it needs to have something following it: I prefer the true course of action. Similarly, you can't say "He speaks the true", it must be truth.
