What does take three mean?

It means something has been attempted for a third time. That's slang from the movie industry. Each time they film a scene it's called a "take." The first time the actors do the scene, that's "Take One." If the scene goes badly, they try again and that's "Take Two." And so on. Sometimes there are many takes before they get the scene right.
