Is it correct to use the adjective "sharp-eyed" in this sentence? Eagles are sharp-eyed birds.

I would say yes. I think some people use the expression “eagle-eyed” also for someone with good eyesight.

Yes, that's fine. Another common phrase in English is "Eagle-eyed" which means the same thing :)
