More honest.
If the adjective has 1 syllable +er. Fast = faster
If the adjective has 2 syllables and ends in y then we change y to i and + er Lucky = Luckier
If the adjective has 2 syllables (doesn't end in y) or is 3+ syllables then we use "more" in front of the adjective. Boring = more boring.

In general the suffixes -er and -est can be added only to one syllable words.

Honester and honestest are never used. If you tried, it would probably sound very childish and cutesy. Stick to 'more honest' and 'most honest.

More honest. Because people from the past made it and we have to follow them.
