Is "off" used as an adverb and "sick" as an adjective?
She was off sick last week.

Yeah, you are right. “Off” is an adverb and “sick” is an adjective.
“Be off sick”is a common use which means “away from work because he or she is ill”.

Not sure, but I think both are adjectives. OFF basically means AWAY.
