How to use ''demographical figures'' in sentence? For example, how can I use this phrase in order to paraphrase the opening of this exercise?

I think the correct adjective is demographic. The easiest way is probably to say 'demographic information' when you paraphrase the question.

Tricky! However, I would say: The pie chart and table below illustrate the population in Australia with reference to the variety of nationalities in the country.
