Italki still refers to Google Meet as "Hangouts." Some teachers, like me, might list one platform, but they can use several. If you find a teacher you are interested in, I would suggest sending the teacher a message and asking.

As Jonathan stated, you can select your preferred too in your profile settings. I prefer Skype because it works more like a phone where you can simply call your student or teacher at lesson time. With the others like Zoom or Meet, you have to set up/ host a meeting, send an invite or link to the meeting, and then accept them into the meeting. With Skype it's as simple as one click-to-call.

Some teachers list the meeting tools they use (in addition to iTalki classroom, which is mandatory for all of us) on their profiles, but even if they don't if you can always select the meeting tool you want before you have to pay for a lesson. So you could try to book a lesson and then just not finish the process if your preferred tools aren't available with a specific teacher. I don't use google meet, but zoom is actually my preferred communication tool. So if you want to take lessons via zoom, I certainly offer them.
