So i understand that الناس is the plural form of the noun .. but which form of the verb does it take.. For example if I wanted to say :
شاهدت الناس يقوم في صفوف طويله أمام المسجد
Should the highlighted verb be يقومون or يقوم ?

الناس is اسم جمع, which is similar to collective nouns in English. It can be singular or plural. It can also be masculine or feminine.
You can say
الناس يقوم
الناس يقومون
الناس تقوم
Personally, I would lean towards شاهدت الناس تقوم. I would use the singular because the intended meaning seems to be the unity of the people during prayer. I would use the feminine form because by doing so it'd be the same in treatment as plural terms that are treated as singular feminine.
