These days, we always use the gerund, not the infinitive, at the beginning of a sentence. Using the infinitive is not wrong, but it sounds strange  (or maybe poetic) nowadays.

Hoy en día, casi siempre usamos el gerundio (“gerund”) y no el infinitivo al inicio de una oración. Aunque técnicamente se podría usar el infinitivo (no hay ninguna regla en contra), la verdad es que hoy en día va a sonar raro (o tal vez poético) si lo haces de esa manera.

So, it should be:

-Dancing is easy. / It’s easy to dance.

-Drinking water is good for your health. / Its’ good for your health to drink water. 

-Playing tennis is a lot of fun. / It’s fun to drink water.
