I noted the quiet intensity I’d read about and the same observant blue eyes referenced in one of the letters

"Quiet": the person being described is not loud or showy.
"Intensity" is force, strength, power...
So the person being described has strength, forcefulness, or power, but possesses it quietly; he or she doesn't make a show of it.
