スペイン語より日本語の方が面白いと思います。

That looks good to me! And then ほど is the one that is structured the opposite way:
「スペイン語は日本語ほど面白くないと思います。」
literally: "I think Spanish isn't as interesting as Japanese."
or more naturally: "I don't think Spanish is as interesting as Japanese."
