If you want to encourage a friend who is too shy to practice their Cantonese speaking how would I say," Dont say that, you can do it! just try little by little."

Let me make it easier for you. I would say
"m4 si3 m4 zi1"
Literally, it means "not try not know".
That means you don't know if you don't try.
This is a common way to encourage people to try something new. e.g. opening a new business, trying a new hobby, or even picking up a girl etc.
