Sapere is more versatile, it's the one you use with subordinate clauses (I know that, who, when, what, how, where, etc). Conoscere is followed by a direct object. I made a video on youtube about this. Look for italian: conoscere vs sapere sergio It should come out.

Here is a simplified first approach to the difference between sapere e conoscere: Sapere is used with practical knowledge such as being able to do something. Examples: Luna non sa andare in bicicletta ( Luna does not know how to ride a bike). Siro non sa cucinare (Siro doesn't know how to cook) Conoscere is used when you know a person. Examples: Conosci Marco? No, non lo conosco. (Do you know Marco? No, I don't know him). Ho conosciuto il nuovo ragazzo di Lucia (I met Lucia's new boyfriend). Please note that there are many different cases in Italian and literal translation does not always work, i.e. the second example where in English it's translated with met and not knew. That is why I introduced the explanation as a simplified first approach.

It all depends on how this notion or this information was acquired, whether in an active way or in a passive way: if in a passive way we use the verb SAPERE ('Non so come fare senza occhiali') , if in an active way - because it is the result of study, deepening, reading, etc. - we use the verb CONOSCERE ('La mia amica conosce molto bene lo spagnolo').
