IELTS writing task 1 The diagram shows how tea leaves are processed into five tea types. Overall, it can be seen that different procedures are followed for every type of tea. The least elaborated variety is called “White Tea” and four stages are necessary to produce it. To begin with, in the first three passages, like every other speciality of tea, the leaves are grown, plucked and then withered. In the last operation, tea leaves designated to become White Tea are then dried into an oven. For the green tea, two more stages are required to have the final product. These are steaming and rolling leaves. For the following “Oolong tea” quality only one more operation is necessary the the previous type of tea. In this new phase leaves are slightly fermented before to be dried into the oven. The highest number of passages is required to produce the Large Leaf Black tea and the Small leaf black tea. The leaves after be withered, are rolled for the Large Leaf Black quality, while for the Small leaf black tea, the leaves are rolled. At the end, both of specialities are treated with full fermentation before to be oven dried and be ready to be sold.

The diagram explains the different phases in which tea leaves are treated to obtain five different kinds of tea.
From this it can be seen that different procedures are followed for each type.

The least processed variety is called “White Tea” and four stages are necessary to produce it.
To begin with, in the first three processes, as for every variety of tea, the leaves are grown, plucked and then dried [hi, I'm not sure what you mean by withered - is this just drying out naturally rather than in the oven?].
In the last operation, tea leaves designated to become White Tea are then dried in an oven.
For the green tea, two more stages are required for the final product. These are steaming and rolling the leaves.
For the “Oolong tea” quality  it is necessary to have one more operation than that for the previous type of tea. In this new phase leaves are slightly fermented before being dried in the oven.
The highest number of processes is required to produce the large leaf black tea and the small leaf black tea.
The leaves after being withered [?], are rolled for the large leaf black quality, while for the small leaf black tea, the leaves are only rolled.
Finally, both specialities are fully fermented before being oven dried and ready for sale.

Ok, I can see the diagram now. I would say wilted instead of withered in British English.
